oh wow ... like i could just reach right into that bowl of popcorn, kim ... munch munch ... it looks sooo good!

seems like comfort food is on both our minds today ...

i made our favourite cheesy mac recipe to take to our neighbours who are grieving a loss, in hopes it gives them some comfort and nourishment ...

and if i could i would give a bowl to each and everyone suffering from the cruel devastation in haiti right now ... we could never imagine going through something like that ...  i wish they never did ... how i wish them comfort ...

we are blessed that we are in a position to help ... to help haiti ...

ps. thought i would share my recipe with you and our friends ~ for when you need a little comfort ...

CREAMY CHEESY MAC DELISH

1/4 c butter
1 sm onion, diced
3 tbsp flour
2 cups milk
1 cup cream (optional)
2 tsp dijon mustard
1 - 8 oz pkg cream cheese, cubed
2 cups cheddar cheese, grated
2 cups roast ham, cubed


5 cups elbow macaroni
salt and pepper


soften onions in melted butter on medium heat in saucepan.
add flour, whisk well.
add milk, whisk well.
continue to whisk while thickening, adding the mustard, cubed cream cheese and eventually the cheddar.
once all is melted and smooth, slowly stir in the cream.
add ham and warm through.
meanwhile cook 5 cups of elbow macaroni in salted, boiling water.
drain macaroni and add creamy cheesy sauce, stir well, salt and pepper to taste.
serve from the pot!


or place in casserole dish and top with dried bread crumbs that have been tossed in 2 tbsp of butter and parsley ~ bake for 20 minutes in 350 oven or until heated through.
