fresh baking is always a comfort to my family.  if only it would last a little longer. :)

here's the recipe for these yummy muffins, that lasted exactly 24 hours in our home.  and i am not kidding!

Banana Chocolate Chip Muffins

1 c sugar (i use splenda)
1 egg
1/2 cup butter (i use olive oil)
1 c mashed bananas
3 TBSP. milk
1 c whole wheat flour
1 c white flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c chocolate chips

preheat the oven to 375.

in a bowl of an electric mixer, combine oil and sugar: beat til thoroughly blended. add the rest of the ingredients except the chocolate chips and beat at low til the dry ingredients are moistened.  turn to high and beat until smooth.  blend in the chocolate chips.

spoon batter into muffin cups til 2/3 full.  bake for 15-17 minutes or until a toothpick inserted in the center comes out clean and dry.  remove from the oven and allow to cool in the pan for 10 minutes before turning out.
